Vanilla Caramel Dream Chiffon Cake

Vanilla Caramel Dream Chiffon Cake

Ingredients :
80g plain flour
4 egg yolks
30g sugar
60g canola oil
90ml fresh milk
1 teaspoon of good quality vanilla essence
2 Vanilla Caramel Dream tea bags

Meringue :
80g Sugar
3/4 tbsp Corn flour (7g)
4 Egg whites

Method:

  • Heat up fresh milk (do not boil it),  add tea leaves in it and let it steep. Cover and leave to cool then strain tea leaves through a fine sieve and set aside (keep the tea leaves).

 

  • Sift flour and set aside. Combine egg yolks and sugar in a bowl. Add the steeped milk, canola oil & vanilla essence and mix well. Next, add the flour mixture and fold evenly with a spatula. Lastly, add in the tea leaves. At this point, blend the leaves into smaller bits. Ensure that mixture is evenly combined. 

 

  • Make meringue - Combine sugar and corn flour. Beat egg whites until foamy (preferably using an electric whisk / mixer). Add half the sugar and flour mixture and continue beating for a few minutes, then add remaining sugar and flour mixture and beat until egg whites are glossy, with stiff peaks.

 

  • Gradually pour all the egg mixture into the meringue at low speed then stop machine. Using a rubber spatula and fold the mixture well.

 

  • Pour batter evenly into the ungreased chiffon cake pan. Gently bang the pan on the table top to release air bubbles.

 

  • Place cake pan in the pre-heated oven 170C and bake at for about 35-40 minutes then switch oven to lower grill for 5 minutes.

 

  • When cake is done, remove from oven and turn the pan over. Leave cake to cool in pan.

 

  • Once cake has cooled completely, carefully run a knife around the sides of the cake to loosen it.
